			<content:encoded><![CDATA[<p>ARE YOU READY FOR SOME CHILI?!</p>
<p>The annual PMC Chili Cook-off will be held on Saturday, January 24th, beginning at<br />
4p.m. in our home in Roswell. Besides the Chili concoctions, we will need a good<br />
assortment of side dishes, desserts and appetizers. The club will provide paper plates,<br />
napkins, plastic cups, soft drinks, etc. Adult beverages are BYOB as usual.</p>
<p>Please email Donna at <a href="mailto:donnasamford55@gmail.com">donnasamford55@gmail.com</a> by January 17th with<br />
your RSVP. We would also like to know an approximate number of chili entries so if you know you plan to enter the contest let us know that as well.</p>
<p>To complete the celebration of the Chili Cook-off, we will continue the tradition of a gift<br />
exchange by playing “Dirty Santa”. If you wish to participate in the exchange please<br />
bring a wrapped gift between $15 and $20 in value to put under the tree.</p>

			<content:encoded><![CDATA[<p>We are going to have a GoPro drive this Saturday. We will meet at Natalie Jane&#8217;s Tavern in Clarkesville at around 9am for breakfast and drivers meeting. We will head out about 10am. I will get some routes printed up so we can decide on the best one. I am hoping to get at least 4 hours of video including video from the front of the group, video from the back of the group, and some in cabin footage from various cars and drivers. If I get enough good video footage, I can get started on a promotional video for the club. So far I have 3 cars definitely going. I&#8217;d like to get a group of 5-10 cars for this drive. Let me know if you are interested.</p>

<ul>
<li>1 package yellow cake mix</li>
<li>1 stick butter, melted</li>
<li>1 beaten eggs</li>
<li>1 tsp vanilla extract</li>
<li>1/3 cup chopped pecans</li>
<li>1 (8 ounce) package cream cheese, softened</li>
<li>2 beaten eggs</li>
<li>1 tsp vanilla extract</li>
<li>1 1lb box confectioners&#8217; sugar</li>
<p>Preheat oven to 350 degrees. Mix cake mix, melted butter, 1 teaspoon vanilla, and 1 egg with a spoon. Mix in chopped pecans. Pat dough into a 9X13 inch pan sprayed w/Pam. Beat cream cheese, 2 eggs, and 1 teaspoon vanilla with mixer. Slowly beat in confectioner&#8217;s sugar. Pour over cake layer. Bake 40 to 45 minutes. Cool completely before cutting into bars.</p>

<ul>
<li>1 box white cake mix</li>
<li>2 3 oz boxes of Jello (2 different flavors)</li>
<li>1 pt of whipping cream (or container of pre-made icing)</li>
</ul>
<p>Bake two layers of basic white cake. Put one on a cake dish and the other on a plate to cool. While the cake is cooling, prepare two flavors of Jello, but do not refrigerate. Cherry and lime work well for Christmas, yellow and orange for Easter, etc. When the cake layers are cool, pour one flavor of Jello very slowly onto one layer and the other flavor onto the other layer allowing each flavor to absorb into each layer. Use the entire batch of each Jello flavor in each layer. Put both layers in the refrigerator overnight to allow the Jello to jell in the cake. Whip up the whipping cream as the icing (or use store bought). Ice the bottom layer, and then VERY carefully stack the other layer on the top of the bottom layer. You may have to flip the top layer over or use a large hamburger flipper to get the top layer on. Ice the top layer and the sides of the completed cake. Put in fridge for a couple of hours to let the icing chill. Decorate with sprinkles, chocolate morsels, strawberries, M&#038;Ms or what ever you wish.</p>
<p>Dig in and enjoy a light and refreshing delicious dessert!</p>
